Overview

Just a short 3km bike ride from the center of Hoi An is a place called Tra Que. It’s not just a garden; it’s the reason why food in this town tastes so much better than anywhere else. For hundreds of years, families here have grown organic herbs and veggies using only natural seaweed from the lagoon as fertilizer.

On this trip, we aren’t just going to a kitchen. We’re going to the source. You’ll see the farmers at work, smell the fresh mint and basil in the air, and eventually, turn those exact ingredients into a delicious meal. It’s relaxed, it’s green, and it’s the best way to understand the “soul” of Vietnamese cooking.

Highlights

  • We start at the local market. It’s loud, colorful, and the best place to see how locals actually shop for their daily meals.
  • A flat, easy ride through the rice paddies. It’s the perfect way to see the “real” Vietnam outside the tourist shops.
  • You’ll get to walk through the rows of herbs and see the traditional tools, no noisy machines here, just old-school hard work.
  • Before we start cooking, you’ll get a traditional herbal foot soak. Trust me, after the bike ride, it feels amazing.
  • You’ll learn the “classics”: Fresh Spring Rolls, Banh Xeo (crispy pancakes), Banana Flower Salad, and Fish in a Clay Pot.

What To Expect

Your detailed Itinerary

08:00 (or 14:00): I’ll meet you at your hotel lobby. We’ll grab our bikes and head to the Hoi An Central Market. We’ll pick up some fresh bits for the class and then enjoy a breezy ride out to the village.

Once we hit Tra Que, we’ll cool down with a drink and take a walk through the herb gardens. You’ll see how the villagers grow everything organically and maybe even try your hand at some light gardening.

10:00 (or 16:00): Time for that herbal foot massage. We use medicinal plants grown right there in the soil to help you relax before we get to the kitchen. We’ll head to the kitchen with our chef. This isn’t a strict classroom; it’s hands-on and fun. You’ll learn how to get that Banh Xeo perfectly crispy and how to balance the sweet and sour flavors Vietnam is famous for.

12:00 (or 18:00): Now for the best part, eating what you made! After a long, lazy lunch or dinner, we’ll cycle back to your hotel.
